A FAMILY LEGACY

We are 4th generation proud inheritors of the legacy of tea masters across generations in our family. Our teacher and inspiration is our father Wú Shui Wàng. Applying wisdom to his deep knowledge of tea, Shui Wang oversees our tea making and training the next generation of tea crafters.

In the time honoured tradition, our artisans craft the tea by hand that ensures quality. We use only natural materials from woven bamboo trays for air drying with fresh mountain air to wood charcoal for fire-roasting. Though making tea by hand is time-consuming and labor-intensive, the result is a richer, cleaner and deeply satisfying tea.

WITHERING

Tea making process is the delicate balance of removing the moisture from the leaves but retaining the flavor and aroma.  The first stage in the process takes several days of continuous work is akin to composting where tea is shaped into donut shaped piles on bamboo trays that allows for air flow.  The pile generates heat reach temperatures which enables the water to be drawn out of the leaves.  This stage requires constant monitoring as the piles need to be stirred to ensure there is no decomposition of the leaves and the leaves are being evenly dried.

CHARCOAL ROASTING

Wuyi rock tea charcoal roasting technology is crucial to promote the formation of the aromas, the unique flavor, both soft and smooth, and makes the tea soup full-bodied.  The core objective of roasting is to remove the last moisture from the tea leaves while retaining the substance and aroma, a delicate balance that if performed incorrectly results in either tea leaves that are over-cooked with little flavor retained, or under-cooked are too moist making for weak tea.  Charcoal roasting is an art developed over many years.  PINYE keeps the tradition of charcoal roasting alive simple because it makes the best tea.
